Make it Simple!
This cocktail features butterfly pea flowers and dried blue flowers that grow in tropical Asia. When steeped in hot water, these flowers will turn the water a pale or deep blue color. The fun continues when you adjust the pH of the tea. Adding acid will turn the water from blue to purple to pink!

Ways to Use this Butterfly Pea Simple Syrup
To make use of your butterfly pea simple syrup, here are some ideas:
- Butterfly Pea Lemonade- Swap this blue simple for the sugar in your lemonade recipe and enjoy the perfect purple lemonade!
- Blue Fizz Mocktail- Muddle blueberries and mint, then add this blue simple, soda water, and ice.
Alternatively, you can make butterfly pea tea (just skip the sugar) and make butterfly pea flower ice cubes!
Tips for Making this Sparkling Gin Cocktail
This recipe is pretty simple, with lots of room to modify. I’ll be using gin and lime – but you can swap the gin for vodka and lime for any citrus you like! This recipe calls for a cocktail shaker.
I’ll also be using Treveri Cellars Sparkling Riesling. This semi-dry sparkling wine is delicious on its own, with complex stonefruit, brioche & honey flavors. The subtle sweetness makes for a great sparkling cocktail. Read more about Treveri Cellars here.

Sparkling Gin Cocktail made with Butterfly Pea Simple
Equipment
- 1 Cocktail shaker
- 1 Jigger
- 1 Vegetable peeler Optional, for the lime garnish
Ingredients
- 1.5 oz. Gin Can swap for vodka
- 1 ounce Butterfly pea simple syrup
- 1/2 oz. Lime juice
- Sparkling wine To top
- Lime peel For garnish
For butterfly pea simple syrup
- 1/2 cup Water
- 1/2 cup White sugar
- 1-2 tbsp Butterfly pea flowers
Instructions
- Combine gin, simple and lime juice in a shaker with ice. Shake to chill.
- Strain into champagne flute or coupe glass. Top with sparkling wine and garnish.
For butterfly pea simple syrup
- Combine water and sugar over a saucepan set to medium-high heat.
- Dissolve sugar in water, then add butterfly pea flowers. Let steep for 2-3 minutes.
- Drain butterfly pea flowers from your simple and pour into your desired container. Allow to cool completely before using. Store for up to one week.
