Method
- Combine gin, simple and lime juice in a shaker with ice. Shake to chill.
- Strain into champagne flute or coupe glass. Top with sparkling wine and garnish.
For butterfly pea simple syrup
- Combine water and sugar over a saucepan set to medium-high heat.
- Dissolve sugar in water, then add butterfly pea flowers. Let steep for 2-3 minutes.
- Drain butterfly pea flowers from your simple and pour into your desired container. Allow to cool completely before using. Store for up to one week.
