Air Fryer Brussels Sprouts with Dijon, Shallots & Maple

These air fryer brussels sprouts are made with dijon mustard, thinly sliced shallots, maple, and a pinch of homemade seasoning salt. Crisp on the outside and tender on the inside, this is, in my opinion, the perfect way to eat brussels sprouts!

The Best Air Fryer Brussels Sprouts

I love brussels sprouts, and since they’re in peak season right now, I figured there’s no better opportunity to share my favorite recipe. 

While I usually make roasted brussels sprouts, my mom handed off her old air fryer to me a couple of months ago, and I’ve slowly developed an attachment to it. I like using an air fryer because they’re less messy, they’re good for small batches, and they’re perfect for reheating. 

For this recipe, I took a bit of inspiration following a dinner out with friends a few weeks ago. We shared an order of dijon brussels sprouts and while they were good…I knew I could make them even better. 

I’ll also be sharing my seasoning salt recipe, though you could easily swap my recipe in for your own. If you’re looking for the perfect main course to serve with your air fryer brussels sprouts, I suggest this cherry barbeque glazed salmon, made with Chukar cherries.

Ingredients for air fryer brussels sprouts

The ingredient list is simple and I’ve included a few suggestions for simple swaps down below. Here’s everything you’ll need:

  • Brussels sprouts – look for sprouts that have vibrant leaves, not bruised or browning
  • Shallot
  • Dijon mustard
  • Olive oil – any cooking oil will do
  • Maple syrup – can swap for honey or agave
  • Seasoning salt

For the seasoning salt:

  • Kosher salt
  • Paprika
  • Black pepper
  • Onion powder
  • Garlic powder

Make it yours

This recipe is perfect as is, but if you’re interested, there are plenty of adjustments to be made so you can enjoy this recipe a little differently each time. Here are some of my recommendations:

  • Add cooked bacon
  • Add minced garlic
  • Top your finished air fried brussels sprouts with balsamic glaze and or parmesan cheese
  • Swap the dijon mustard for equal amounts of balsamic vinegar
  • Serve with fresh lemon wedges
  • Swap the dijon for soy sauce, the oil for sesame oil, and add garlic for Asian brussel sprouts

How to make air fryer brussels sprouts

Step 1- Make the seasoning salt

Grab a small bowl and combine all of your ingredients, including salt, pepper, paprika, onion powder, and garlic powder. Combine and store in an airtight container.

Step 2- Prep work

First, prepare the brussels sprouts by rinsing them with water and slicing the stems off. If you notice any leaves are bruised or browning, remove them. Slice your brussels sprouts in half, or if they’re particularly large, in quarters. 

Then, in a large bowl, combine the brussels sprouts with the shallot, mustard, oil, maple syrup, and seasoning salt. Toss to combine. 

Step 3- Air fry brussels sprouts

Transfer the seasoned brussels sprouts to your preheated air fryer and fry at 400°F for 15 minutes, stopping halfway through to shake the air fryer basket, to mix up the sprouts, and continue cooking.

Step 4- Serve brussels sprouts

Your brussels sprouts are done when they’re fork tender but still chewy and have a caramelized color. If after 15 minutes your sprouts are not done cooking, continue to air fry them in 3-minute increments, checking until they’re done.

Once they’re perfect, remove them from the heat and serve as desired.

How to make roasted brussels sprouts

Before I discovered the joys of my air fryer I used to just make roasted brussels sprouts. So, to make roasted brussels sprouts, prepare them as indicated and lay them in an even layer on a baking sheet lined with parchment paper. 

Bake your brussels sprouts at 400°F for 35-40 minutes, or until they’re fork-tender, slightly chewy, and nicely crisp on the outside. Check halfway through and toss the sprouts with a spatula so they cook evenly.

FAQs

Why did my brussel sprouts burn in the air fryer?

Your brussel sprouts might have burned if they weren’t properly rotated in the air fryer. Stop halfway through the cooking process to give the basket a good shake, so they all get equal access to the heat.

Can I air fry brussel sprouts without oil?

Yes, air fryers are great because they require little to no added oil. I left oil in this recipe because it does help to make for crispier brussels sprouts, though you could omit it and get similar results.

  • 1 Large bowl

Ingredients
  

  • 1 lb Brussels sprouts Rinsed, with bottom trims stemmed, sliced in half
  • 1 Shallot, peeled and diced thin
  • 1/4 cup Dijon mustard
  • 2 tbsp Olive oil
  • 1 tbsp Maple syrup Or honey
  • 1 tbsp Seasoning salt

For the seasoning salt (yields slightly less than 1/2 cup of salt)

  • 1/4 cup Kosher salt
  • 1 1/2 tbsp Paprika
  • 1 tbsp Black pepper
  • 1/2 tbsp Onion powder
  • 1/2 tbsp Garlic powder

Instructions
 

  • In a large bowl, combine the trimmed brussels sprouts with the shallot, mustard, oil, maple syrup, and seasoning salt. Toss to combine.
  • Transfer seasoned brussels sprouts to your preheated air fryer and fry at 400°F for 15 minutes, stopping halfway through to shake the air fryer basket (to rotate the sprouts) and continue cooking.
  • Your brussels sprouts are done when they're fork tender but still chewy and have a caramelized color. If they're not fully cooked, continue air frying in 3-minute increments, checking until done.
  • When your brussels sprouts are finished cooking, remove them from the air fryer and serve as desired.

To make the seasoning salt:

  • Combine all ingredients in a small bowl and store in an airtight container.
