Quick and Easy Date Energy Balls
There’s a million energy bars out there, but most of them are loaded with sugar and nonsense filler. These date energy balls are the perfect combination of protein, healthy fats, fiber, sodium and potassium.
The best part about these date energy balls is how easy they are to customize. Here are some of my favorite ways to modify this recipe to make it a little bit different every time:
Swap peanut butter for almond butter– or any other nut butter you prefer
Use 1/2 rolled oats, 1/2 flax seed meal– for additional omega-3s and fiber
Stir in 1/4 chocolate chips- for more chocolatey flavor
Make a chocolate ganache by melting cocoa with coconut oil– because… why not? Remember, these will need to stay refrigerated so they don’t melt!
Swap cocoa for toasted coconut flakes– and use almond butter for “almond joy” date balls
Ingredients
Rolled oats- I’ll be using instant, but any type of quick oats will work as well.
Peanut butter- Crunchy or smooth, make sure to stir it up!
Pitted dates- I love the ones in the refrigerated produce aisle at Trader Joe’s, as they tend to be plump and chewy. Any type of dried date would work as well.
Coarse sea salt- For that savory compliment to this sweet snack.
Cocoa- I’m using unsweetened. This step is optional if it’s not your thing.
Equipment
Food processor- I definitely recommend a food processor as opposed to a blender. Here is the one I use every day.
Date Energy Balls
Equipment
- 1 Food processor
- 1 Silicone spatula
- 1 Medium sized bowl
- 1 Small ramekin
Ingredients
- 1 cup Pitted dates
- 1/4 cup Instant oats
- 1/4 cup Peanut butter
- 1 tsp Coarse sea salt
- Cocoa powder, for dusting
Instructions
- Combine pitted dates, oats, peanut butter, and sea salt into your food processor. Pulse until the dates are mostly processed, then turn on and let run until the date mixture is smooth, stopping periodically to scrape the sides of the food processor.
- Pour date mixture into your bowl. Using your hands or an ice cream scoop, make 1-inch balls and place them on a small plate.
- Using a small ramekin, fill it with cacao. Drop your energy bites into the ramekin and coat with cacao. Serve and enjoy!
