Date Energy Balls

These simple yet rich energy bites are packed with flavor and enough protein to get you up and going all day long! Made with peanut butter, oats, and dates, this is a nutritious and satsifying snack, whether you're on the go or not!

Ingredients
  

  • 1 cup Pitted dates
  • 1/4 cup Instant oats
  • 1/4 cup Peanut butter
  • 1 tsp Coarse sea salt
  • Cocoa powder, for dusting

Equipment

  • 1 Food processor
  • 1 Silicone spatula
  • 1 Medium sized bowl
  • 1 Small ramekin

Method
 

  1. Combine pitted dates, oats, peanut butter, and sea salt into your food processor. Pulse until the dates are mostly processed, then turn on and let run until the date mixture is smooth, stopping periodically to scrape the sides of the food processor.
  2. Pour date mixture into your bowl. Using your hands or an ice cream scoop, make 1-inch balls and place them on a small plate.
  3. Using a small ramekin, fill it with cacao. Drop your energy bites into the ramekin and coat with cacao. Serve and enjoy!
