Making the Perfect Chipotle Caesar Dressing
First, I feel it’s my duty, to be honest with you guys… this recipe isn’t entirely my own.
Before you exit, I should clarify. This recipe belongs to my fiancé Frank, who uses it to make the best Caesar salad I have ever had. That’s why I wanted to share it with you! I have only the most selfless motivations for stealing, I assure you.
Anyway, this dressing is great, and I did tweak it slightly to make it more accessible. I don’t know about you, but I don’t have 3 gallons of mayonnaise lying around, much less a hand mixer half my size.
I’m also going to give you the recipe in my photo for building the perfect Caesar salad using this chipotle Caesar dressing recipe.
Alright, let’s stop wasting time and get into it!
Ingredients
Here is what we are going to need to make this chipotle Caesar salad dressing:
- Mayo
- Grated parmesan cheese
- Lemon juice
- Worcestershire sauce– I’m using a vegan Worcestershire sauce but either kind can be used.
- Fish sauce– Optional. This can be omitted if vegan.
- Garlic cloves
- Black Pepper
- Chipotle peppers– you can buy canned peppers in the Latin section of your grocery store. I don’t go through them quickly enough, so I just freeze the peppers and pry one or two off when I need them.
Chipotle Caesar Salad Tips
In addition to the chipotle peppers, there are a few other things I do to make my salads stand out:
Blackened Prawns
You can make your own blackened seasoning, but I like this premade seasoning blend.
To make blackened prawns, set a skillet to medium heat and add a tablespoon of oil. Once the oil slicks across the pan, add your prawns (defrosted if using frozen) and sprinkle your blackening seasoning.
Cook your prawns for 4-5 minutes or until they start to curl. Then, flip them and sprinkle more seasoning and continue cooking for 2-3 more minutes or until they are fully cooked.
Charred Lemon Wedges
Yes, that’s right, I like to char my lemon wedges because it brings out a nice blackened flavor. It also happens to soften the lemon and release more juice.
To make a charred lemon, simply cut the lemon in half, rub it with a tiny bit of oil and salt, then place the lemon cut side down on a grill or frying pan.
Cook for 3-4 minutes, until nicely browned and soft on the inside.
Lazy Girl Brown Butter Croutons
Now, as for the croutons, I make them the lazy way. Simply melt 1/4 cup of butter on a skillet set to medium-high heat.
Next, I recklessly tear at slices of bread until I have a pile of crouton-sized bread pieces. Toss your bread in the skillet and add a pinch of salt. Cook until nicely toasted.
Chipotle Caesar Salad Dressing
Equipment
- 1 Knife and cutting board
- 1 Small mixing bowl
- 1 Fork/whisk
- Measuring cups
Ingredients
- 1 cup Mayo
- 2 tbsp Grated parmesan
- 1 tbsp Lemon juice
- 1 tbsp Worcestershire sauce I'm using vegan Worcestershire sauce
- 1 tsp Fish sauce Optional, can omit if vegan
- 3-4 Garlic cloves minced
- 1-2 Chipotle peppers, chopped fine In adobo sauce. Can use more or less, depending on how spicy you want it
- 1/2 tsp Black pepper or more, to taste
Instructions
- Combine all ingredients in a small mixing bowl and mix to combine. Adjust seasonings as necessary. Keep in an airtight container and consume within one week.
