For Glazed Salmon
- Preheat the oven to 325 degrees, then add your oil to an oven safe skillet and set the heat to medium high. Once the pan is hot, place your salmon skin side down and cook for 2-3 minutes, depending on thickness.
- Flip the salmon skin side up, peel the skin off with your tongs, and discard. Top your salmon with BBQ sauce and place the pan in the oven.
- Cook salmon for 5-6 minutes, or until the salmon reaches an internal temperature of 140 degrees.
For the Cherry Chutney
- In a small saucepan set to medium heat, add your oil, garlic, onion, and a sprinkle of salt and pepper. Cook for 2-3 minutes, until fragrant. Then, add apples and cherries and cook for another 2-3 minutes.
- Add vinegar and let simmer for approximately 5 minutes. Taste and adjust flavor as needed. If cherries haven't plumped up, add a splash more vinegar and/or water.
- Serve warm over freshly baked salmon.
