If there’s anything I kept from my vegan days, it’s this simple recipe for the perfect blended banana nice cream. I’m adding strawberries because they’re in season and too good to resist!
Tips for Making the Perfect Banana Nice Cream
I recommend using frozen fruit, as this will keep the thick texture we want.
How to freeze bananas? Simply peel them and chop them into chunks. Freezing on a plate or baking sheet will help make sure they don’t freeze as a giant glob.
I always freeze my brown bananas. To make it easy, I keep a bunch of these reusable food storage bags on hand.
For the equipment, I find the food processor to be easiest, here is the one I use. A blender will work too, but you will have to scrape the sides often. If using a blender, add liquid slowly and blend on low. I’ve made the mistake of adding too much liquid too quickly, which will result in a smoothie… No harm there!
Prep Time: 5 minutes
Servings: 2
Strawberry Banana Nice Cream Ingredients
- 2 frozen bananas
- 1 cup frozen strawberries
- 1/4 cup milk, I’m using oat milk
- 1/2 tsp vanilla extract (optional)
Strawberry Banana Nice Cream Steps
- Add all ingredients to a food processor. Blend until smooth, stopping periodically to scrape the sides down with a spatula.
- Pour nice cream into a bowl, add your toppings, and enjoy!
Toppings & Modifications
Any fruit can be swapped for strawberries. I particularly like blueberries or mango. Adding frozen avocado (yes, you can freeze ripe avocados!) will make the nice cream extra smooth.
Here are some of my favorite toppings:
- Chocolate chips or cacao nibs
- Drizzle of honey, maple syrup, or agave
- Granola
- Hemp seeds or chia seeds
- Shredded coconut
- Peanut butter (way too much peanut butter)
Make Ahead of Time
If you have leftover strawberry banana nice cream, or you want to make it ahead of time, you can pour the nice cream into a Tupperware or loaf pan. Cover with plastic wrap or lid and keep it in your freezer for up to 3 months.
If freezing, consider using an ice cream scoop when you’re ready to dive in!
