- 1.5 oz. Gin Can swap for vodka
- 1 ounce Butterfly pea simple syrup
- 1/2 oz. Lime juice
- Sparkling wine To top
- Lime peel For garnish
For butterfly pea simple syrup
- 1/2 cup Water
- 1/2 cup White sugar
- 1-2 tbsp Butterfly pea flowers
Combine gin, simple and lime juice in a shaker with ice. Shake to chill.
Strain into champagne flute or coupe glass. Top with sparkling wine and garnish.
For butterfly pea simple syrup
Combine water and sugar over a saucepan set to medium-high heat.
Dissolve sugar in water, then add butterfly pea flowers. Let steep for 2-3 minutes.
Drain butterfly pea flowers from your simple and pour into your desired container. Allow to cool completely before using. Store for up to one week.
