How to Make Zucchini Bread with Almond Butter

This zucchini bread recipe is made with farm fresh zucchini straight from the CSA, then combined with small-batch chai-spiced almond butter. The resulting moist and perfectly sweetened breakfast bread is exactly what you need to bake to get into that fall feeling!

The Best Zucchini Bread Recipe

Now, I love banana bread as much as the next person, but because I love smoothies more I freeze my brown bananas. Zucchini, on the other hand, I tend to always have too much of. With weekly CSA deliveries, I can’t eat them fast enough!

Normally I just make my zucchini bread the old fashioned way, but after discovering Revival small-batch almond butter, I knew it would taste great baked into a fresh sweet bread.

Zucchini Bread with Almond Butter

This soft and fluffy zucchini bread not only makes use of extra zucchini, but it becomes even more rich and decadent when we add in sweet almond butter. We finish the whole thing off with a maple syrup and almond butter frosting. This is classic zucchini bread taken to a whole other level.

Equipment

  • 2 Large mixing bowls
  • 1 plastic spatula
  • 1 Loaf pan
  • 1 wooden spoon
  • 1 Box grater
  • 1 Toothpick or a fork
  • 1 Small bowl for the frosting
  • Measuring cups

Ingredients

  • 2 1/2 cups All-purpose flour
  • 1 1/2 cups Sugar
  • 1 tsp Salt
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tbsp Cinnamon
  • 1/4 cup Canola oil
  • 2 Eggs
  • 1 1/2 cups Zucchini, grated about 1 large zucchini
  • 1/2 cup Almond butter chai-spiced or plain
  • 1 tsp Vanilla extract

For Maple Almond Butter Frosting

  • 1/4 cup Almond butter chai-spiced or plain
  • 2 tbsp Maple syrup
  • 2 tbsp Milk I'm using oat milk, but any milk will work

Instructions

  • Preheat the oven to 350 degrees and grease 1 loaf pan.
  • In one mixing bowl, combine flour, sugar, salt, baking powder, baking soda, and cinnamon.
  • In another mixing bowl, combine oil, eggs, zucchini, almond butter, and vanilla extract.
  • Add dry ingredients to wet ingredients, working in batches. Mix with a wooden spoon to combine.
  • Pour batter into your prepared loaf pan and bake for approzimately 1 hour, or until a toothpick inserted comes out clean.
  • Once the bread is done baking, remove it from the loaf pan and let cool for 15 minutes before adding the frosting. Slice, serve, and enjoy!

For Maple Almond Butter Frosting

  • While the bread is baking, combine frosting ingredients in a small bowl and stir to combine. Set aside until you're ready to frost.
